The tartaric stability of the wine is not a direct measure, because it cannot be performed by means of a physico-chemical phenomenon, which measures it directly.

OPERATING PRINCIPLES:

It creates a state of extreme stress, adding to the wine a considerable amount of finely pulverized potassium bitartrate to overcome the processes of precipitation inhibition and continuously records the electrical conductivity at different temperatures, in order to find out if at a certain temperature there is the possibility of precipitation.

There are two methods available:

• isothermal test (ISO: indicating whether precipitation will occur at a specific temperature) and

• stability test (TS: which allows estimating the real needs of cold treatment).
